Recommended for confinment: Panfried Fish Fillet with Mushrooms

Another recipe that i came across which is suitable for confinment dish
Use red snapper, sole or any boneless variety you prefer. Fish is an excellent source of protein. Do not overcook fish as it becomes tough and stringy. Use as little oil as possible to pan fry to keep fat intake to a minimum.

Serves: 2 people
2 fish fillet (sole or threadfin)
1 small head broccoli (cut into small florets)
4 - 6 baby potatoes
5 - 6 fresh button mushrooms
(washed and sliced)

1 tablespoon margarine OR
2 tablespoons soya bean oil
150 ml chicken stock (pre-seasoned)
50 ml milk (skimmed / low fat)
1 teaspoon flour
1/2 teaspoon turmeric
2 - 4 cloves garlic (chopped)
1 knob ginger (finely sliced and fried till crisp)
light soya sauce to taste

Method:
1. Season fish fillets with light sauce, a little pepper and turmeric powder. Leave aside for about 15 minutes before cooking.
2. Bring a pot of water to a boil seasoned with pepper, salt and 1/2 teaspoon margarine. Boil potatoes till soft, drain and leave aside.
3. In the same water, boil the broccoli florets till tender (do not overcook). Drain.
4. Bring stock to a boil. Stir in milk and add mushroom slices. Thicken with flour, blended in a little milk or water.
5. Heat oil in a pan. Keeping the heat fairly high, fry garlic till crisp and add fillets, turning over at intervals to ensure even browning.
6. Place fillets on dish with broccoli and potatoes. Pour over hot mushroom and serve with a knob of herb and garlic butter, if preferred.

Exact from the website:
This is a 'classic' recipe that even the hospital LC will recommend to you. A lot of breastfeeding mothers here know this recipe. It is more common for our local mothers to use threadfin fish instead. Threadfin is also known as "ngor hur" in hokkien, or "wu yu" in mandarin.

100g raw peanuts
1 half-ripe papaya, approx. 1kg

1.Soak peanuts in water overnight. Drain before use

2.Skin and halve papaya. Remove seeds, rinse and cut into big wedges. Rinse tangerine peel.

3.Clean and scale fish tail. Rinse, drain and pat dry thoroughly.

4.Heat 2 tablespoons of oil in a wok. When the oil is smoking, add the ginger and fry until fragrant. Now include the fish tail and fry both sides until light golden brown.

Steamed Chicken Mushroom Rice

Steamed Chicken Mushroom Rice
This Inspiration came from the Japanese claypot rice that sister bought from Iseten which cost $10/small mini pot... sister bought for us to try out during mother's day... hehe prehaps its us.. we all had this.. Mmmmm dun seem to suit our taste as to what we are imaging how it tasted like.. Theirs version are more sticky compare to what i had done...
Being me.. hehehe i always like to try out something that i am interested in.. Mr sim commented how will it tasted if we are using japanese rice for the steamed-lup-cheong-chicken-rice instead of our jasmine rice..
OH well... since i wanna to try out a new recipe.. i decided to use it for this..
My purpose is to try out something that i will like to ask the person cooking my confinment meal AS i am seriously not very keen in the traditional confinment meal..
As my reader know... i am not very good in writeing recipe so its only a rough guide for me to let Mr sim know what i like and what i used.. for those who are keen to try out.. pls let me know if u like it anot after trying :)

Ingredients i used:
3 chicken wings - washed, chopped and marinate with
1 tsp minced spring onion's white part
1 tsp minced ginger
1 tsp oyster sauce
1 tsp dark soya sauce
1 tsp sesame oil

* 1/2 tsp salt
*1/2 tsp light soya sauce
(*pls note: i doesn't want a very salty flavour so i didn't add in salt.)

abit of pepper
Leave it aside for @ least 1 hrs...

Diced carrot & fresh mushroom
Spring onions - optional

1 cup japanese rice
1 1/2 cup water/stock
* Japanese rice will need more water then our jasmine rice.

I slightly pan fried all the ingredients. No need to add in any oil.
Just a lil stir will do so that the colour will be more appealing after steaming it.

Add in all ingredients into ur steaming bowl. No worries if the veg stuffs all floated up,
you can always mix well after its being served when cooked.

Lastly top the chicken on top and steam for 30 - 40min under high flame.

Done after 40min.. leave it in the wok for 10min before serving it.
Enjoy it while its hot.
