Brocoli with minced Meat Mushroom

The idea of the mushroom came from  steam tou foo and the method is the same.
All i need to do is to cook the brocoli and make a stock as gravy for it.

am craving for pasta BUT mr sim is working late recently
so i decided to cook my own instead of waiting for him to bring us out.

Though alots of work to be done but its all worth it when we get to eat wat we crave.

Recommended for confinment: Panfried Fish Fillet with Mushrooms

Another recipe that i came across which is suitable for confinment dish
Use red snapper, sole or any boneless variety you prefer. Fish is an excellent source of protein. Do not overcook fish as it becomes tough and stringy. Use as little oil as possible to pan fry to keep fat intake to a minimum.

Serves: 2 people
2 fish fillet (sole or threadfin)
1 small head broccoli (cut into small florets)
4 - 6 baby potatoes
5 - 6 fresh button mushrooms
(washed and sliced)

1 tablespoon margarine OR
2 tablespoons soya bean oil
150 ml chicken stock (pre-seasoned)
50 ml milk (skimmed / low fat)
1 teaspoon flour
1/2 teaspoon turmeric
2 - 4 cloves garlic (chopped)
1 knob ginger (finely sliced and fried till crisp)
light soya sauce to taste

Method:
1. Season fish fillets with light sauce, a little pepper and turmeric powder. Leave aside for about 15 minutes before cooking.
2. Bring a pot of water to a boil seasoned with pepper, salt and 1/2 teaspoon margarine. Boil potatoes till soft, drain and leave aside.
3. In the same water, boil the broccoli florets till tender (do not overcook). Drain.
4. Bring stock to a boil. Stir in milk and add mushroom slices. Thicken with flour, blended in a little milk or water.
5. Heat oil in a pan. Keeping the heat fairly high, fry garlic till crisp and add fillets, turning over at intervals to ensure even browning.
6. Place fillets on dish with broccoli and potatoes. Pour over hot mushroom and serve with a knob of herb and garlic butter, if preferred.

Angel Hair Pasta

 

 

I prefer noodles then rice nowsadays and coz of Mr sim's irregular working hours now... we seldom dine out as well... to make sure i get to eat what i craved... so cooked it myself is still the best...
Lazy me.. used my fav brand of soup to make the base which doesn't need to add in water like some brands out there which are salty to be drink on its own. This brand never failed me in anytime i am in need of it.. but the company doesn't have alots of variety to chose from. Tink the most is 2 or 3 if my memory didn't failed.

Seriously i dun mind having this for my coming confinment too so i am listing down the ingredients i used.

Ingredients:

Pasta of ur choice
1 can soup of ur choice
Fresh mushroom
Baked chicken - own cooked
Brocoli
Carrot

Boiled the veg and leave aside.

Prepared the pasta as your usual way.

Slightly pan fried the mushroom and add in the can soup.

As for baked chicken - its up to u to chose what u like to add in... anyting u like as long as u wan it :p
 After that assemble everythings into the serving plate... Done.. dinner within 30min..

Smoked Fish

Before and after smoking.. I added 2 sauages with it to smoked together. The fish is so tender even being smoked for 20min. On the left 3rd pic.. is the juices from the fish.. I was telling Mr sim.. it look like roasted pork isn't it..

Let's take a look @ the grouper fish... was watching Asian Food Channel sometimes ago and saw this guy doing smoked fish. It loook really easy so i decided to try it one day... really a long wait till now... decided to use the fish Mr sim fished...
I chosen to use Long Jing Tea to do it, REALLY very fragant with tea smell and taste.. Mr Sim love it too...
