What you need:
1 pig’s trotter
300 g brown sugar
200g old ginger
500 ml black vinegar
What you do:
Cut pigs trotter into serving pieces.
Rinse and scaled them in hot water.
Remove and drain well.
Skin and mash ginger lightly.
Heat 2 tablespoon of sesame oil and fry ginger till golden brown.
Transfer ginger to claypot.
Add vinegar and brown sugar
Bring it to a boil and let simmer for half an hour.
Add the trotters and simmer for two hours. (Till the trotters are soft and tender)
