Confinment food: BEEF STEW

(One of my Favourite Recipes! The sauce is really great for eating with rice! Older children especially love this! If you want to give this to slightly younger children, you might want to substitute the beef cubes with minced beef.)

300g Beef Flank Meat, cut into small cubes
2 potatoes, skinned & cut into small cubes
2 tomatoes, chopped
1 carrot, skinned & cut into small cubes
1 Tbsp pearl barley seeds
1 Large Onion, cut into wedges
OIL - for deep frying

Cornflour Mixture - 1 Tbsp cornflour mixed with 2 Tbsp cold water

Marinade:
1 tsp light soy, 1 Tbsp sugar, 1 tsp dark soy, 2 Tbsp cornflour, 1 Tbsp Oyster Sauce, 2 Tbsp oil

Seasoning:
1 tsp light soy, 1 tsp sugar.

Heat 6 cups oil in wok until hot. Add potatoes & deep fry until golden brown. Dish out & drain.

Heat 1 Tbsp oil. Fry carrots & onions for 1 min.

Add beef & fry for 3mins to seal in the juices. Add in the 1 Tbsp barley.

Pour in 3 cups water & bring contents to boil. Lower flame & simmer for 1 hour.

Add tomatoes & deep-fried potatoes. Continue to simmer for another ½ hour.

Thicken with cornflour mixture if required. Add seasoning if necessary.
